Summary
A restaurant close needs reconciled accounts, complete period costs and identified exceptions, with someone responsible for every missing input.
1. Agree the period, close date and contacts
Name the person supplying each statement and answering each type of question. Confirm the bank, card, POS, payroll and inventory sources required for the month.
- Reporting dates and accounts covered
- Location and entity mapping
- Contacts for missing documents
2. Reconcile sales and account activity
Compare POS totals, card and delivery settlement statements and bank receipts. Keep fees, refunds and timing differences with their source references. Investigate unexplained amounts.
3. Check costs that belong to the month
Review supplier bills, credits, payroll entries and stock count dates. Ask the person preparing the accounts how costs are treated when the supporting document arrives late.
4. Review and deliver the reports
Check unusual balances and incomplete inputs. Present the agreed statements with material changes and a dated list of unresolved items. The close is ready for review only when its completeness and limitations are understood.
